We’ve finally started seeing signs of spring. The sunshine has been glorious, adding a bit of color to the typical grey tones of Chicago winter. The forsythia bush outside my kitchen door is just starting to bud and the crocuses are peeking up through the frosty ground.  Soon they will be vibrant green, pink and purple….

I’m on a quest to find ways to simplify my crazy life, especially the process of feeding my family.  This recipe rocks because of its taste, simplicity AND the fact that can be easily packed into tomorrows lunchbox.  I’m pulling out the muffin tins to put our main course into a neat little package with Mini Tex-Mex Chicken and Cheese…

Ever since my first trip to Zingerman’s Roadhouse, many years ago, I’ve been obsessed with sweet potatoes.  The all you can eat sweet potato wedges alone are worth the 5 hour road trip to get there. Or maybe it’s the zesty chipotle aioli they’re served with, I’m not totally certain.
