Winter beet salad brings beautiful color into a white winter day.

Inspired by an actual glimpse of the sun and the thought that I will soon be vacationing in shorts and a bathing suit.  I figure I best put down the cookies and pies in exchange for some of the beautiful colors available in

…the produce section. For winter in Chicago the selection of fresh veggies was outstanding. I found the most beautiful lettuce that was grown in a hydroponic farm in Ohio. It was so beautiful it could have doubled as a floral arrangement. Go Ohio!

No real recipe here. I simply blended good olive oil with a bit of white balsamic vinegar and a bit of fresh local honey, salt and pepper.

Yum!
