It’s been a wonderful Christmas break.  Having Paul home from college and all the kids together has been my favorite part of this holiday.  While the kids catch up on sleep after hours of old school video games I’m making this cake to deliver as one last holiday gift for the New Year.  Of course I’m…

  • Belinda - Am finally getting around to making this! I hope it was ok to add zest and lemon juice to batter. What ratio do you use (water to sugar) for the syrup?ReplyCancel

    • admin - Hi yes! There is the juice of one lemon and its zest in the recipe. Also simple syrup is 1to1. One cup sugar to 1 cup water. Sorry I didn’t make that clear. Let me know how you like it. My favorite part is the candied lemons. ☀️ReplyCancel

Lemon, Ricotta and Almond Flourless Cake=bliss and if that’s not enough I added fresh Raspberries!

  • Helene Powers - Hello,

My family does not like Coconut at all.

    • admin - You could simply omit the coconut. Perhaps add a few extra nuts. Coconut is a pretty unique ingredient that really doesn’t have an alternate. I hated coconut all my life until I had really well made coconut macaroons and then this cake. Now I love it. Sweetened coconut doesn’t seem to have the strong flavor that unsweetened coconut has. Maybe you can change your families mind about coconut like mine was changed. Good luck.
