New Year Arugula Salad With Caramelized Sweet Potato

Happy New Year 2018. Like many at this time of  year I wake to a new year with the pressure to make a new start, clean up my act, do things differently, rush to the gym to start a new regiment. I look around my house and think of all the things that, this year,…

Christmas Dinner | The Perfect Prime Rib

So what exactly is a perfect prime rib, anyway? Whether you buy prime or select, fresh or dry-aged, corn fed or grass-fed, if you don’t cook it right, it won’t be good. Here is my idea of home cooked prime rib perfection: The Perfect Prime Rib must have a deep brown, crisp, crackly, salty crust…

  • Aileen Fitzgerald - Thanks a million Sally, my talented friend!  Doing one on Christmas Eve and Christmas!  Will try the closed door method!  XoReplyCancel

    • admin - Thank you Aileen, sweet friend. I hope you love it. We are obsessed with the herb rub. Bummer to take over the oven but soooo worth it. Merry Christmas!ReplyCancel

  • Grandpa! - We used your Closed Oven method for today’s Christmas dinner. I read food blogs by pompous cooks that know it all and tell you how to do things because they are “better” than anyone else … and then there’s you … and your method of cooking an expensive and highly anticipated dinner … I followed your directions as prescribed … and I must tell you, I was extremely skeptical that it would work. I must also tell you and all your readers that, unequivocally, THIS WAS TRULY EXTRAORDINARY! … and THE BEST PRIME RIB we have ever had! … better than any of the very expensive restaurants have been to anywhere in the world. You are a genius! I highly recommend this for all, from beginners to experts … C’EST MAGNIFIQUE!

Our family has voted it to become our new Christmas Dinner Tradition.
May you have a wonderful Christmas and, to you and your family, ALL THE VERY BEST for 2018 and years to come!ReplyCancel

New Orleans Gumbo with Shrimp + Sausage

Many years ago my Mom added a New Orleans gumbo to the daily lunch menu in her restaurant. Since then, it’s been a popular dish that people line up for.  She gave me the recipe years ago but honestly, (true confession) I’ve never made it.  This week I decided to give it a try.  Mardi Gras is…

Lobster and Pancetta Cream Sauce

Really, anything could precede the title of this post and it would have my attention.  It should read…Clams and Mussels with Lobster and Pancetta Cream Sauce. But, that is too long for a post title so I figured I would have your attention easy enough with just the sauce.  Pancetta cream sauce on anything would…
