Winter beet salad brings beautiful color into a white winter day.

…the produce section. For winter in Chicago the selection of fresh veggies was outstanding. I found the most beautiful lettuce that was grown in a hydroponic farm in Ohio. It was so beautiful it could have doubled as a floral arrangement. Go Ohio!
No real recipe here. I simply blended good olive oil with a bit of white balsamic vinegar and a bit of fresh local honey, salt and pepper.
Yum!
My plate even looked pretty when I was almost finished.
