Cedar Plank Salmon | Deconstructed Cob Salad

Cedar Bay salmon products come pre-seasoned and ready to be placed directly into the oven or onto the BBQ with little or no handling or preparation required. Cedar Bay products are amazingly simple. I’m preparing their Applewood with Orange & Ginger salmon today. This is a whole filet but it can also be purchased in single serving portions. I took the frozen salmon, preseason and resting on a cedar plank, out of the freezer to defrost for a few hours in the refrigerator. All I had to do was bake it in a 425° oven for 18 minutes and it was ready to serve. The highlight was the smells wafting through my kitchen. The plank is soaked by the freezing then thawing process so it created the perfect level of steam allowing for delicious cedar flavoring to the salmon. My kitchen smelled like a spa. When the salmon was ready it flaked apart easily with a fork exposing tender moist juicy salmon. Ya’ll know I’m supper picky. You don’t see ads on my sight and I only endorse what I love. This product is amazing. 

When I was trying to think about a recipe to create with this lovely piece of fish I wanted to allow it to remain intact on the board so the simplicity could be appreciated. I decided to serve it as a deconstructed salmon cob salad. I added a few different elements to my salad and I’m glad I did. As you might know a traditional cob salad has strong flavors like bacon and blue cheese in its recipe. I wanted the salmon and it’s delicious seasoning to be the star here so I kept the ingredients light and simple. The board styling is a perfect way to serve this as everyone at your dinner can create their own salad based on their preferences. It’s perfect for entertaining. My favorite accompaniments are the fresh peaches and the 7 minute eggs. This salad is served with two dressing choices, a creamy chipotle dressing to offset the sweet seasonings and a fig balsamic dressing which paired beautiful with the salmon.

Ingredients

  • One Cedar Bay Grilling Company cedar planked Atlantic salmon filet applewood with Orange & Ginger prepared to package directions.
  • Baby romain or assorted greens
  • heirloom tomatos quartered
  • cucumber, sliced
  • red onion, sliced
  • 7 minute boiled eggs, halved
  • sliced peaches
  • poached asparagus
  • sliced avocado
  • sliced peppers
  • halved baby boiled potatoes
  • bread or crackers
  • fig balsamic vinegarette
  • creamy chipotle dressing
  • sea salt and pepper to taste

Instructions

  • Prepare the salmon according to the simple directions.
  • Using a board or platter set the salmon in the center then arrange the salad ingredients around the salmon.
  • Serve with bread or crackers
